Retailers are being challenged to be more adventurous in their marketing of beef to add more to their bottom line - and to farmers.
The National Beef Association has challenged retailers and processors to adopt the same innovative butchering techniques that are being pioneered in the United States. Food technicians there have developed several new cuts of beef from parts of the animal that would otherwise be minced, adding Pounds 40 to the value of each animal by selling them as steaks.See the full content of this document
